Jaggers Is Coming to Huntsville: Texas Roadhouse's Fast-Casual Brand Takes Over Former Taco Cabana

HUNTSVILLE, Texas — Huntsville's restaurant scene is getting another new addition, and this one comes with ties to one of the country's best-known restaurant companies.



Jaggers, a fast-casual concept created by Texas Roadhouse founder Kent Taylor, is preparing to open at 253 Interstate 45 South, taking over the building previously occupied by Taco Cabana. Signage announcing the restaurant has already appeared at the property, with an anticipated opening during the first quarter of 2027.


The location could be particularly well suited for the concept. The former Taco Cabana is a roughly 2,328-square-foot freestanding restaurant with an existing drive-thru, according to a previous commercial real-estate listing. As of early September, Jaggers signage had been installed, although substantial construction activity had not yet begun.


Jaggers isn't simply another traditional hamburger chain.


The restaurant was launched in Noblesville, Indiana, in 2014 and is part of the Texas Roadhouse family of brands, which also includes Texas Roadhouse and Bubba's 33. The company describes Jaggers as its fast-casual concept emphasizing fresh ingredients and made-to-order meals.


Its menu centers on double-stacked burgers, hand-breaded chicken sandwiches and tenders, fresh salads and hand-spun milkshakes. Vegetables are prepared daily, while sauces and dressings are made in-house. Unlike many conventional fast-food operations, Jaggers says food is prepared after the customer places an order.


The restaurants typically offer dine-in, carry-out and drive-thru service, giving Jaggers a format capable of competing in both the traditional fast-food and fast-casual markets.


For Huntsville, the announcement represents more than another place to grab lunch.


The Interstate 45 corridor has become one of the clearest indicators of the city's continued commercial expansion. New restaurants and businesses are following residential growth, Sam Houston State University's expanding presence and increased consumer demand throughout Walker County.


Jaggers' decision to reuse an existing restaurant property also puts a previously vacated location back into commercial service rather than requiring an entirely new site.


For residents who have watched new businesses steadily appear along Huntsville's busiest commercial corridor, the familiar red Jaggers signage offers another indication of where the city is headed.


If the current timetable holds, Huntsville residents should be ordering their first Jaggers burgers, chicken sandwiches and milkshakes sometime in early 2027.
